Spiced Potato and Cauliflower Curry
Instructions:
  1. Scrub the potatoes thoroughly and cut into 1.5 cm cubes. Soak the cubed potatoes in a large bowl of water to remove excess starch.
  2. Chop the cauliflower into bite-sized florets.
  3. Bring a large pot of water to a rolling boil, add a pinch of salt, and switch it off. Add the cauliflower florets and let sit for 5 minutes. Drain and rinse with cold water to prevent sogginess.
  4. Heat oil in a heavy pan. Add mustard seeds and cumin seeds, followed by slit green chilies and minced ginger garlic. Sauté for a minute.
  5. Add finely chopped onions and curry leaves. Sauté until the onions soften.
  6. Drain the soaked potatoes and add them to the pan. Sauté on high heat for a minute, then add the cauliflower florets.
  7. Mix in the spice powders: turmeric, coriander, chili powder, and garam masala. Stir well.
  8. Cover and cook until the potatoes are soft, about 10-12 minutes. Avoid adding water to keep the dish from becoming mushy.
  9. Once cooked, add crushed kasuri methi, lemon juice, and chopped coriander leaves. Mix well and remove from heat.
  10. Serve warm.
